- You need 200 g/7 oz/1 3/4 cups plain (all-purpose) flour
- Provide 2 tsp baking powder
- Provide 100 g/3 1/2 oz/1/3 cup butter,cut into small pieces
- Prepare 75 g/2 3/4 oz/1/3 cup demerara (brown crystal) sugar
- Provide 100 g/3 1/2 oz/1/2 cup sultanas (golden raisins)
- Get 25 g/1 oz/2 tbsp glace' (candied) cherries,chopped finely
- Get 1 egg,beaten
- Provide 2 tbsp milk
Instructions to make Rock Drops:
- Lightly grease a baking tray (cookie sheet).
- Sieve (strain) the flour and baking powder into a mixing bowl.Rub in the butter with your fingers until the mixture resembles breadcrumbs.
- Stir in the sugar,sultanas (golden raisins) and chopped glace' (candied) cherries.
- Add the beaten egg and the milk to the mixture and bring together to form a soft dough.
- Spoon 8 mounds of the mixture on to the baking tray (cookie sheet).Make sure they are spaced well apart as they will spread during cooking.
- Bake in a preheated oven,200 oC/400 oF/Gas Mark 6,for about 15 - 20 minutes until firm to the touch when pressed with a finger.
- Remove the rock drops from the baking tray (cookie sheet).Either serve piping hot from the oven or transfer to a wire rack and leave to cool before serving.
