The ingredients needed to prepare Watermelon Rind Halwa:
- Use 1 cup milk
- Use 1 cup watermelon rind
- Use 1 Tbsp ghee
- Get 1 Tbsp sooji
- Get 1 Tbsp besan
- Use 1/4 cup sugar
- Take 1/2 tsp cardamom powder
- Use 1/2 tsp jaiphal (optional)
Instructions to make Watermelon Rind Halwa:
- After cutting watermelon retain the skin on and peel twice as watermelon has thick skin. Cut into small pieces
- Make a purée of watermelon rind cut pieces in the food processor and set aside
- In a wok heat ghee, add besan, add sooji and stir for 5-7 mins.
- Add watermelon purée and stir for 10 mins until water is absorbed
- Add sugar and stir for another 10 mins because sugar will leave water
- Stir for 1-2 mins more and add cardamom powder, jaiphal and stir for 1 min.
- Add milk and stir to cook thick consistency.
- Add chopped almonds and pistachios.
- Plate it well and garnish with further chopped pistachios and almonds. Enjoy!
